šŸ“ Berry & Lemon Coconut Bliss Balls

Ingredients (makes ~12 balls)

  • 1 cup berries – freeze-dried raspberries, blueberries, cranberries, or a mix

  • 1 cup desiccated coconut (plus extra for rolling)

  • ½ cup raw nuts – almonds, cashews, macadamias, or a mix

  • ¼ cup coconut oil

  • 2 tbsp honey or maple syrup

  • Zest of 1 lemon

  • Juice of ½ lemon


Instructions

  1. In a food processor, combine nuts, berries, desiccated coconut, lemon zest, and lemon juice. Pulse until coarsely chopped.

  2. Add coconut oil and honey (or maple syrup). Process until the mixture comes together and can be shaped into balls.

  3. Roll the mixture into bite-sized balls, then coat each in extra desiccated coconut.

  4. Place on a tray lined with parchment paper and refrigerate for at least 2 hours to set.

  5. Store in an airtight container in the fridge for up to 1 week.


🌟 Tips / Variations

  • Mix berries for a colourful spring feel. Freeze-dried strawberries or mixed berries work beautifully.

  • Toast nuts lightly before processing for richer flavour.

  • Macadamias make the balls creamy, almonds add crunch, cashews balance sweetness.

  • Optional: drizzle with melted dark chocolate before chilling for an extra indulgent treat.
