Lemon & Blueberry Almond Cake

This beautiful almond cake is naturally gluten free and dairy free, bursting with juicy blueberries and fresh lemon, and makes the perfect afternoon treat with a cup of herbal tea. Almond meal provides healthy fats and protein to help keep you satisfied, while blueberries are packed with antioxidants that help protect our cells from oxidative stress. Fresh lemon adds a bright citrus flavour while providing a gentle source of vitamin C.

Simple, wholesome ingredients can be one of the most enjoyable ways to nourish both body and soul.


Ingredients

  • 2½ cups almond meal

  • 2 tsp baking powder

  • Pinch of sea salt

  • 3 eggs

  • ⅓ cup pure maple syrup or honey

  • ¼ cup extra virgin olive oil

  • Zest of 2 lemons

  • Juice of 1 lemon

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries

  • Flaked almonds (optional, for topping)


Method

  1. Preheat the oven to 170°C (fan-forced 160°C) and line a 20 cm round cake tin with baking paper.

  2. In a large bowl, combine the almond meal, baking powder and sea salt.

  3. In a separate bowl, whisk together the eggs, maple syrup, olive oil, lemon zest, lemon juice and vanilla until smooth.

  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.

  5. Fold through the blueberries, being careful not to overmix.

  6. Spoon the batter into the prepared tin and sprinkle with flaked almonds if using.

  7. Bake for 35–45 minutes, or until lightly golden and a skewer inserted into the centre comes out clean.

  8. Allow to cool before serving.


Serving Suggestions

Enjoy on its own, or serve with:

  • Natural or Greek yoghurt

  • Coconut yoghurt

  • Fresh berries

  • A dollop of ricotta with an extra drizzle of honey
