Gentle Minestrone Soup (GF, DF, No Garlic or Onion)

This gluten-free, dairy-free minestrone soup is a wholesome, veggie-packed classic perfect for any season. With a gentle flavour profile and no garlic or onion, it's ideal for those with sensitive digestion or following a low-FODMAP approach.

This is easy also to customise to any other dietary issues, and if you have no issues with garlic, onion or other FODMAP foods, then feel free to add them.


Ingredients:

  • 1 tbsp olive oil

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 1 zucchini, chopped

  • 1 cup green beans, trimmed and chopped

  • 1 can (15 oz) diced tomatoes

  • 4 cups vegetable broth (gluten-free)

  • 1 tsp dried oregano

  • 1/2 tsp dried basil

  • Salt and pepper to taste

  • 1 can (15 oz) cannellini or kidney beans, drained and rinsed

  • 1 cup cooked gluten-free pasta or quinoa (optional)

  • 1 handful baby spinach or kale

  • 2 tbsp chopped fresh chives (added at the end)

  • Fresh parsley or basil to garnish (optional)


Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté carrots and celery for 5 minutes until just starting to soften.

  2. Add zucchini, green beans, herbs, diced tomatoes, and broth. Bring to a boil.

  3. Lower heat and simmer 15–20 minutes, until vegetables are tender.

  4. Add beans and cooked gluten-free pasta or quinoa. Simmer 5 more minutes.

  5. Stir in spinach or kale and chives. Cook until greens are wilted.

  6. Season with salt and pepper. Garnish with parsley or basil if desired.
